At the center of this year’s offerings is the highly anticipated Christmas log, created by the talented pastry chef Stephan Baptiste. Inspired by the rich terroir of the island, Baptiste has created a unique Christmas log that promises to delight even the most discerning palate.
The Bûche Cacao Exotique is distinguished by its distinctive shape, inspired by the natural treasures of Mauritius. Mimicking a cocoa pod, it pays homage to the cacao tree, a symbol of the island’s fertility and generosity. The log features a lightly sweetened white chocolate ganache, subtly flavored with vanilla. A coconut cookie provides a soft, delicate texture, while a hazelnut crunch adds a touch of indulgence. The exotic twist comes from a mango-passion fruit insert that provides a burst of tropical freshness.
The Bûche Cacao Exotique will be available to order and pick up over the counter from December 20-27, 2024.
