The Saint James Paris, a renowned Parisian hotel with a reputation for exquisite culinary experiences, has unveiled its Christmas log for 2024. This year, under the direction of its newly appointed Pastry Chef, Coline Doussin, the hotel is presenting a Christmas log that promises to be both visually stunning and a delightful surprise for your taste buds.
A graduate of the renowned Ferrandi Paris, Coline Doussin, who took the helm of the Saint James Paris Patisserie in early 2024, honed her skills in some of France’s most prestigious kitchens before joining the team at the hotel.
For this year’s festive season, Doussin has unveiled “Au coin du feu” (By the Fireside), an exceptional Christmas log inspired by the iconic fireplace in the hotel’s Bellefeuille restaurant. The creation is a nod to her signature dessert, which artfully combines chocolate and pine needles.
“The Saint James Paris fireplace is the heart of the Bellefeuille restaurant and for me represents the warmth and conviviality of the house,” explains Doussin, highlighting the inspiration behind her festive masterpiece.
The 2024 Christmas log features a dark chocolate crunch studded with pine nuts, paired with a decadent chocolate biscuit base. The chef’s inventive touch is evident in the creamy Sylvester pine needle element and smoked chocolate components, which add an unexpected and delightful twist to the traditional dessert. A light chocolate marbled fromage blanc mousse is the perfect counterpoint to the rich chocolate elements.
To complete this gourmet experience, Doussin has included eight chocolate truffle logs as mignardises, offering a delightful array of sweet bites to accompany the main dessert.
Food lovers and culinary adventurers can pre-order this unique Christmas log until 15 December, with collection on 23, 24 and 25 December. Priced at €140, the log serves 6-8 people, making it the ideal centrepiece for holiday gatherings.
