Parisian patisserie Ladurée has once again elevated holiday desserts with its Yule Log 2024. Created by pastry chef Julien Alvarez, this new offering seamlessly blends innovation and tradition.
At first glance, the log resembles an elegant three-tiered Christmas box, but beneath the surface lies a confection of exceptional detail. The base combines almonds from the Estoublon estate’s Ferragne and Lauranne varieties with fragrant vanilla from the island of Réunion.
Each bite offers a delightful contrast of textures. There’s the satisfying crunch of a shortbread base studded with raw almond slivers, complemented by the rich softness of a muscovado sugar and raw almond cookie. A layer of vanilla-infused semi-salted butter caramel adds a buttery sweetness that blends perfectly with the almond paste and praline. All of this is topped with a light vanilla cream and wrapped in a delicate white chocolate shell.
The top layer isn’t just for show; it opens to reveal a hidden treasure of macaroons, eugenies and festive pearls, adding an extra touch of indulgence to the experience.
Available only by order, this luxurious dessert is priced at €300, reflecting its artisanal craftsmanship and premium ingredients.
