La Réserve Paris, the discreet luxury hotel near the Champs-Élysées, has introduced its yule log 2024. This festive dessert honors the hotel’s Signature restaurant, which proudly received three Michelin stars last March.
Chefs Jérôme Banctel and Jordan Talbot have created a culinary masterpiece to celebrate this achievement. The base is a cocoa crisp with a hint of fleur de sel for a delightful texture and flavor. A soft chocolate biscuit rests on top, its sweetness harmonizing with the bold notes of a buckwheat-infused cream and a creamy salted butter caramel. The creation is topped with a Grand Cru chocolate mousse, rich and deep, completing this indulgent treat.
The yule log is wrapped in a delicate chocolate tablet that echoes the texture and golden hues of the Cordoba leather that adorns the walls of the restaurant’s dining room. Breaking this layer reveals a buckwheat and fleur de sel praline. Subtly marked with the Gabriel seal, this elegant touch pairs beautifully with coffee, extending the pleasure beyond the holiday season.
