As the holiday season approaches, renowned pastry chef Christophe Michalak unveils his Christmas log for 2024, inspired by Japanese cuisine.
The centerpiece of Michalak’s holiday collection is a visually stunning trompe l’oeil log that pays homage to the culinary traditions of Japan. This masterful creation combines the delicate flavors of raspberry, lychee and lime in a harmonious blend that is both light and indulgent.
Dubbed “Raspberry Lychee Sushi,” this Christmas log serves eight and features a complex layering of components. A lime Nantais cookie base is enhanced with a zesty lime punch, while a velvety raspberry cream adds a vibrant fruity note. Inside, a lychee and raspberry compote is complemented by a smooth lychee ganache and a delicate lychee and raspberry confit. This culinary work of art is crowned with a luscious lychee rice pudding panna cotta, creating a multi-dimensional taste experience.
Michalak’s attention to detail extends to the exterior of the log, which is adorned with a Dulcey chocolate baguette and an intricate chocolate string. Health-conscious guests will appreciate that this dessert is made without wheat flour, making it a more inclusive option for those with dietary restrictions.
In addition to the signature log, Michalak has expanded its holiday offerings to include two gourmet “sapins rocher” or rock Christmas trees. The Milk Hazelnut version features a 40% cocoa milk chocolate exterior encasing a fluffy Piedmont hazelnut praliné and toasted hazelnuts.
